Sunday In My City: Sobey's BBQ Part4- The Finale!
While i did all of the preparation, the Maple Planked Atlantic Salmon would have to be passed off to DaddyO! He is the BBQ'er in the household and i'm never in the mood to waste good food. However, in handing off this task, i lost some of the control as well. No wind and a gorgeous evening called for 'dinner to be cooked over the fire', said DaddyO. I was of course worried he'd ruin the big ta-da of the meal, but entrusted the fish to his methods. Lord only knows how much DaddyO loves his fire!

Maple-Planked Atlantic Salmon

Marinating the fresh Atlantic Salmon.
1/2 cup Sensations by Compliments Maple Bbq Sauce
1/4 cup Maple Syrup
1. Whisk together 1/2 cups bbq sauce and maple syrup in a large shallow bowl or glass baking dish. Add salmon fillets and turn over to coat. Cover with plastic wrap and refrigerate for 30 minutes or more. While the salmon is marinating, prepare the carrots as per this post.

1. Whisk together 1/2 cups bbq sauce and maple syrup in a large shallow bowl or glass baking dish. Add salmon fillets and turn over to coat. Cover with plastic wrap and refrigerate for 30 minutes or more. While the salmon is marinating, prepare the carrots as per this post.
2. Next, preheat the grill (or in this case, fire) to medium-high. Set soaked planks on hot grill, lightly brush with vegetable oil, and close the grill (we used a roasting pan to cover). When the grill starts to smoke, remove the salmon from the marinade and arrange fillets on planks. Brush some additional marinade over salmon, close the lid, and reduce the heat to medium. Cook without peeking for 12 minutes.
We continued to peek for fear of the salmon starting on fire! DaddyO made sure to keep water on hand, for moisture touchups.
Please note: the plank did bow, so don't be shocked. (Though on the actual bbq, it bowed less.)
While waiting on the salmon, DaddyO entertains with his spatula flipping!
3. Brush an additional 2 tbsp. worth of barbecue sauce over salmon and cook for 5 to 10 minutes longer, until opaque and just cooked through.
**Take the Carrot Slaw out of the fridge and mix fresh organic chives into it. Place slaw on 8 plates or a platter and top with the maple salmon fillets.
The full set-up, with some red meat thrown on too!
VOILA! The board looks like it took quite a beating, but underneath the meat it was fine. Yummy! Cannot wait to eat! (On the bbq, the board definitely did not blacken like this!)
