Raspberry Rhubarb Muffins
Makes 12
1 cup all purpose flour
1/2 cup natural wheat bran
1 cup rolled oats
1/4 tsp sea salt
1 egg
1 cup brown sugar
1/2 cup butter or margarine, melted
1/4 tsp cinnamon and nutmeg
3 cups chopped rhubarb
In a bowl, whisk flour, sea salt, wheat bran, cinnamon, nutmeg and rolled oats.
In mixing bowl, combine melted butter, brown sugar, and egg,
Slowly mix the dry goods into the wet mixture.
Spoon into muffin cups and bake at 350F for 20-25 minutes.
