No Mixer Required Banana Bread #cabinlife
I have a very nice Kitchen Aid mixer at home. But when I go to the cabin, I am at the whim of a whisk, a fork, or a spoon. So, needless to say not every recipe works well.
After playing with some known ingredients, I came up with this recipe.
No Mixer Required Banana Bread
2/3 very ripe bananas
1 large egg
1/3 cup melted butter
1/2 cup of sugar
1 tsp vanilla extract
1 tsp baking soda
dash of salt
1 1/2 cup flour
That's it!
Step 1: Mash the ripe banana, then mix in the melted butter, vanilla, egg and sugar.
Step 2: Add the baking soda and salt to the flour.
Step 3: Slowly mix the flour into the wet mixture.

Preheat the oven to 350F.
Grease a 4 x 8 loaf pan.
Bake for 1 hour.
